Ingredients (4 servings)

Gr. 300 beans,
gr. 300 flour,
water
garlic, salt, pepper, extra virgin oil,
n. 2 o 3 tomatoes

Soak beans overnight. Simmer the beans in cold water, in a pot (preferably of earthenware).

At the same time, make a dough of flour and as much water required to obtain a stick ball. Roll the dough using a rolling pin. Once you’ve rolled your pasta the way you want it (we recommend the typical fettucine shape), you need to shape or cut it straight away.

In a saucepan combine oil, garlic over moedium low heat. As soon as the garlic begins to color, add the tomatoes.  Add the beans and enough water to cover. Bring to boil, add some salt and the pasta. When cooked, let it rest for a few minutes  and then serve adding some olive oil.
